It’s been raining all weekend, and I’m currently wrapped up under a blanket on the couch with the back door open so I can listen to it. I love the rain. It makes me want to slow down and focus on the small things. It also makes me want to bake. It rained all morning yesterday when I made this quiche, and I must say that baking when it’s raining is one of my favorite things. Anyone else? Eating homemade quiche when it’s raining is also not something I can complain about..

It’s been nice to slow things down these past few weeks. My husband and I both had two weeks off for the holidays and it’s been so nice being home together, seeing family, and just taking the time to reset. I go back to work tomorrow so I had to squeeze in a few last baked goods before the semester starts.

This quiche sits in a delicate flaky crust and is layered with cheese and broccoli. This classic flavor is a crowd pleaser. It is 10x more delicious when you use home-made crust. Back to the quiche. Quiche just sounds fancy, doesn’t it? Well, besides that the word is french and most french things sound fancy, quiche is a more elegant form of a breakfast casserole. But it’s not any more difficult, really. It’s inside a pie crust, and maybe it’s more custard-y. But that’s it! People are always impressed with a quiche. And they always devour it. Trust me.

This flavor combination is pretty safe, if you ask me. Broccoli cheddar is a classic. Use this to convert any quiche-skeptics, then move onto something more daring like my Bacon Leek and Thyme Quiche..

Cheesy Broccoli Quiche
This savory quiche is filled with broccoli and cheese. It's always a hit and disappears quickly!
Ingredients
  • 1 single pie crust
  • 1 medium head fresh broccoli (about 2 cups chopped)
  • 1/2 cup cheese (I used a mexican blend)
  • 4 eggs
  • 2 egg yolks
  • 1 cup heavy cream
  • 1/2 tea. salt
  • 1/4 tea. pepper
  • 1/4 tea. onion powder
Instructions
1. Preheat oven to 350°F. Roll out pie crust and fit it into a 9 inch pie plate or tart pan. Pierce bottom of crust with a fork to prevent crust from bubbling up. Cover with plastic wrap and place pie plate in the freezer while you prep the remaining ingredients.2. Chop up the brocolli into small chunks. Steam broccoli to par-cook it, about 5 minutes. Set aside to cool.3. In a medium bowl whisk together the 4 eggs and 2 egg yolks until they are smooth and cohesive. Then whisk in the 1 cup of heavy cream. Add salt, pepper, and onion powder.4. Remove pie plate from freezer and spread broccoli and shredded cheese inside, and then pour in the egg mixture.5. Place quiche into the preheated oven and bake at 350°F for 30-45 minutes. Quiche is done when the center still jiggles slightly (but does not move like liquid). In a tart pan, you'll see the crust coming away from the edges a bit also. Let cool 30 minutes before slicing. Enjoy!
