Cucumber Melon Popsicles

Cool, refreshing, and perfectly sweet, these popsicles are a great way to cool off this summer. 

Not only are they full of the most delicious melon EVER, but enjoying one of these popsicles will make you feel cool as a cucumber.

I'm starting a new job as a baker at a bakery today! I'm beyond excited. I've been testing and tweaking recipes all weekend in preparation. I'm a bit of a "prepper", I must say. If the proof is in the pudding, then in this case, Paul's freezer is full of "pudding". Does that even make sense? Who knows. I'm typing this at an unmentionably early hour of the day. 

Prepper or not, starting a new job is still nerve-wracking! I'm thinking of slipping one of these popsicles into my purse for when I need a little boost of "cool as a cucumber". I don't think it will last, I'll be glad to know there is still one left in the freezer waiting for me when I come home! (along with a years supply of muffins I just made)

With only 4 ingredients, there's no reason not to make these. I let the fruit do most of the sweetening (you could leave out the simple syrup completely). The delicious honeydew melon is the flavor star,  and the hint of cucumber is so refreshing. I'd offer you one, but they're too good to share. :)

Cucumber Melon Popsicles
Cool and refreshing, these honeydew melon popsicles have a hint of cucumber and are the perfect combination of refreshing and sweet.
Ingredients
  • 1 honeydew melon (a little larger than a softball)
  • 5 inches cucumber (peeled)
  • 1/4 cup sugar
  • 1/4 cup water
Instructions
Start by making the simple syrup: boil water and sugar on the stovetop in a medium saucepan for a 2 minutes, and set aside to cool. Sugar should dissolve and it should be sticky.Slice up the honeydew melon and cucumber into chunks, and blend with the simple syrup until smooth. Strain through a fine mesh sieve before pouring into popsicle molds. Freeze for 1 hour before adding popsicles sticks. Let freeze at least 4 hours.
