Mixed Berry No-Bake Cheesecake With Oreo Crust

This easy no-bake cheesecake is drizzled with mixed berry simple syrups and filled inside an Oreo cookie crust. Beat the heat and make this cheesecake without the oven!

I can't believe that the 4th of July is next weekend already. It seems like just a few days ago I was thinking about how much time I still have before starting school, and feeling like it felt like a long summer for once. Now here I am and June has flown by in the blink of an eye.

My dog Riley is terrified of fireworks. New Years Eve, and the 4th of July are her least-favorite days ever. The loud noises leave her in a weird scared daze, and it's just really sad. Sometimes I'm out of town on these days and I makes me so sad to think about her being so scared without her mommy. She's never alone, she is usually with my parents if I'm gone.. But this year I don't have any plans to go out of town, so I'm making it a priority to be with her that night. Even if we sit in the tub together. She does weird things when she's scared, and usually goes into the shower, tub, or a closet. I secretly enjoy when she's scared because she lets me cuddle her- a rare occurrence.

With it being summer and my baking addiction becoming increasingly hard to fight without the excuse of homework, I'm trying to make more recipes that don't require use of the oven. Enter the no-bake cheesecake. I've seen these everywhere on the internet. They are so simple and versatile. Not to mention delicious! I had to hold back eating it out of the bowl when I made it.

The no-bake cheesecake is made up of sweetened whipped cream, and cream cheese folded together. Most recipes call for Cool Whip and cream cheese, but I prefer to make my own whipped cream. If you've never made you own whipped cream you really must give it a try. The flavor of homemade vs. the artificially flavored, hydrogenated oil-filled, shaving creamish "Cool Whip" is really drastic. It just takes an extra minute or two to whip it up yourself, and you can feel so much better about knowing what is inside of it. Plus nothing can beat it's flavor, and you adjust the sugar added to your preference. Who can complain about that?! 

I know you're thinking about what ingredients are in Oreos, right? Well I decided I was okay with that for the sake of this cheesecake. I could manage to make my own whipped cream but I wasn't about to try messing with homemade Oreos. Feel free to use a different type of cookie for the crust! 

I made a no-bake Oreo crust and filled it with the no-bake cheesecake filling. For the berry drizzles I used some leftover Blueberry Simple Syrup, and made a strawberry version as well. To get that effect, simply drizzle drops over the top and run a toothpick through it to create designs.

Ingredients
  • 24 oreo cookies
  • 1/4 cup melted butter
  • 1 cup heavy whipping cream
  • 1/3 cup sugar
  • 8 oz. cream cheese
  • 2-3 T. blueberry simple syrup
  • 2-3 T. strawberry simple syrup
Instructions
In the bowl of a food processor blend Oreo cookies until fine. Add in melted butter. Pour into a springform pan and press down to create an even layer of cookie crust, and place in the freezer while you prepare the filling.To make the whipped cream, whip the heavy whipping cream and sugar on high until it thickens and forms soft peaks. In a separate bowl, beat the cream cheese until soft. Fold the whipped cream into the cream cheese mixture and stir to combine.Remove springform pan from the freezer, and spread cheesecake filling inside. Smooth the filling.If using berry syrups, drizzle a few tablespoons over the top of the cheesecake, and then run a toothpick through in zig-zags to create a design. Cover with plastic wrap and let it set in the refrigerator for at least 4 hours, or overnight. Enjoy!
