One Giant Chocolate Chip Cookie

With one bowl and less than 20 minutes you can have a giant chocolate chip cookie ready to devour. 

This recipe makes one giant chocolate chip cookie. While it is only one cookie, it yields many titles. Chocolate chip cookie for one. Big A$$ Cookie. The chocolate chip cookie you don't have to share. Lazy girl's chocolate chip cookie. Single lady's chocolate chip cookie. Trying to be skinny but a fat girl at heart's chocolate chip cookie. Also a cookie for men, mind you. 

Okay, I'm done. 

So I've been on Spring Break this week from school, and I decided to go on a spontaneous trip to visit my sister and her family in Utah for Easter. I flew alone for the first time, which I surprisingly enjoyed! And I got to get my much needed baby fix. If you follow me on instagram you probably saw my adorable niece. While I was there, I helped my sister put on an Easter brunch, and I loved it! I went a little crazy and even made up a very detailed oven schedule to go by. I'm pretty sure I should be in catering or something, I had so much fun.

But it was a lot of work! And now that I'm back home, I haven't really felt like putting together anything that requires much work. Hence, this cookie.

Basically I took my small batch recipe that makes 4 Brown Butter Chocolate Chip Cookies, and turned it into one giant cookie. Because the only thing better than 4 normal cookies is one GIANT cookie! 

It only takes one bowl and a few minutes.

No mixer required, no pile of dishes, and no waiting for the dough to chill.

Just mix it all together, form a ball, and bake!

It has perfectly chewy edges, and a soft center. You really do need a big glass of milk with this one.

I have made this probably 12 times in the past week. Mostly recipe testing, and a little bit of wanting-a-freaking-cookie-right-now. Lots of tweaking but I am finally happy with it! I feel like I should explain the need for the measured out whisked egg.

I tried using and egg yolk for this recipe and it turned out great, just not every time. Because egg yolk sizes differ with every egg, and this recipe is so small, the amount of egg really can make a big difference. Sometimes it was perfectly chewy and sometimes it was super cakey. So, to get the best results every time, I had to measure out the amount of egg. All you do is crack an egg in a bowl, whisk, and measure out what the recipe calls for. Use the remainder for something else, like your breakfast tomorrow morning. 

So next time you want cookies, and not 24 of them, try making this single giant chocolate chip cookie! You'll be amazed at how easy and delicious it is.

One Giant Chocolate Chip Cookie

With one bowl and less than 20 minutes you can have one giant chocolate chip cookie ready to devour.

Yield: 1 giant cookie

Ingredients

  • 2 T. softened butter
  • 3 T. brown sugar
  • 1 T. white sugar
  • 1/2 tea. vanilla extract
  • 1 T. whisked egg
  • 1/3 cup flour
  • 1/4 tea. salt
  • 1/4 tea. baking soda
  • 3 T. chocolate chips

Cooking Directions

  1. Preheat oven to 325 F.
  2. In a small bowl stir together softened butter and sugars.
  3. Stir in vanilla and 1 tablespoon of a whisked egg.
  4. Add flour, salt, baking soda and gently stir to combine.
  5. Mix in chocolate chips.
  6. Form into a ball and place on a parchment sheet covered cookie sheet.
  7. Flatten down into a round disc, and bake for 15-17 minutes until golden brown and center is almost done.
  8. Let cool on the cookie sheet for 10 minutes before removing and enjoying.
