Roasted Balsamic Strawberries

Roasted Balsamic Strawberries take your ordinary strawberries up a notch, or ten.

This simple process will give you an extraordinary strawberry topping. 

I can honestly say I've never had anything like Roasted Balsamic Strawberries before. But when I saw this recipe on Nerds and Nomsense I knew I had to make it. Roasted Balsamic Strawberries. It sounds so fancy, doesn't it? Something for a sophisticated pallet, for sure. But, making it was a breeze, and eating it, well... too easy!

It's sweet, yet savory. It's tangy, and rich all at the same time. It's something else.

We drizzled it on top of some homemade vanilla bean ice cream, and OH MY.

Seriously, it was amazing. Nothing like anything I've ever had. It tasted so sophisticated and delicious. My parents think I need to sell it by the jar!

Just look at those vanilla bean specks! That alone has me done in.

The strawberries are chopped up and tossed with a few ingredients. Then they are roasted in the oven in a pan to create a thick, dark, gooey syrup. Use it to top ice cream, throw it in popsicles, on pancakes, on cheesecake, or enjoy a little with a spoon! The possibilities are endless.

Roasted Balsamic Strawberries Recipe:

Recipe adapted from Nerds and Nomsense

2 heaping cups chopped strawberries

2 Tb. + 2 tea. white balsamic vinegar

1 Tb. vanilla extract

pulp of 1 vanilla bean

1/4 cup honey

2-3 Tb. brown sugar

Directions: 

Wash, hull, and slice strawberries into reasonable sized chunks.

In a medium bowl, combine all ingredients and stir together.

Pour into a 9x9 pan.

Roast in the oven at 375 for 50 minutes. Stir after 30 minutes.
