A few days ago it rained here. In California. In August. What's going on? Rain in the summer might be a normal thing in other places but not here. I'm not complaining though. Waking up to the smell of rained on sidewalks is my favorite thing to wake up to. The quick glimpse of cooler weather and a soft breeze gave me a craving for some autumn commodities.
Since wearing a scarf and boots while it's still over 100 degrees isn't appropriate, I took the logical course of action. Popsicles!
After seeing Christina's Earl Grey Popsicles I was totally inspired to make some of my own. Since Chai tea is my favorite, it's only fitting: Chai Tea Latte Pops!

I didn't use all heavy cream like Christina did. I used a mixture of heavy cream and whole milk, and a little added sugar. You can use all heavy cream, or even coconut milk.
Also, I didn't sweeten my tea, but I did mix in a few tablespoons of my cream mixture which was sweetened. If you'd like your tea on the sweet side, add in some sugar or honey.
**Something valuable I learned from being a server** To make iced tea quickly, brew tea in a fraction of the water you need. It makes it super concentrated, and then you can add the rest of the cold water to dilute it to normal. This way it cools off faster!
I did this with my tea so I was able to freeze it easily. I steeped 2 bags in 1/2 cup of hot water for 4-6 minutes. Then I added the remaining 1 cup of water (cold water) and went on my merry way!
Chai Tea Latte Popsicles Recipe:
Makes appx. 10 popsicles
1 1/2 cups of steeped Chai Tea
1 cup milk
1 1/2 cups heavy whipping cream
2 Tb. sugar
Steep 2 bags of chai tea.
In a small bowl, whisk together the milk, whipping cream and sugar.
Mix 2-3 Tb. of the cream mixture into the tea.
Alternating with the layers, pour 1 Tb. of mixture into the popsicle molds. Freeze after each layer for at least 30 minutes before adding the next.
Repeat until all liquid is used up.
